Business Desk- If you want to make something which is tasty as well as nutritious for morning breakfast or evening hunger pangs, then you can try the Gujarati dish Doodhi Ka Muthia. This traditional dish prepared from gourd i.e. milk and flour is very much liked in Gujarat. The special thing is that it does not need to be deep fried. You can also prepare it by steaming it with less oil. Bottle gourd has good water content and fiber is also found in it. Whereas flour and gram flour give it rich texture. If you want to include something new and light in your daily breakfast, then definitely try this easy recipe.
Material
Bottle gourd-1 cup grated
Wheat flour-half cup
Gram flour-half cup
Semolina-2 tbsp
Green chilli-1 finely chopped
Ginger paste-1 teaspoon
Green Coriander – 2 tbsp
Turmeric-half teaspoon
Red chilli powder – half teaspoon
Celery-half teaspoon
Sesame seeds – half teaspoon
salt-as per taste
Lemon juice- 1 teaspoon
water as per need
for tempering
Oil-1 tsp
Mustard – half teaspoon
Sesame seeds – half teaspoon
A pinch of asafoetida
Curry leaves- 5-6
some green coriander
Method
- First of all, wash the bottle gourd, peel it and grate it. Do not squeeze out all the water from it, because only the juice of bottle gourd will help in kneading the dough.
- Now add wheat flour, gram flour and semolina in a big vessel. Add grated bottle gourd, ginger, green chilli, turmeric, red chilli, celery, sesame, salt, lemon juice and green coriander to it.
- Mix everything well and prepare a soft dough. Add some water if needed, but take care that the mixture is not too wet.
- Now apply light oil on your hands and make long rolls or small cylindrical shapes from the prepared mixture. Do not keep them too thick, so that they can cook properly from inside.
- Heat water in a steamer or large vessel. Place a mesh or plate with holes on it and place the muthiya rolls on it.
- Now cover the lid and cook in steam on medium flame for about 15-20 minutes. After cooking, check by inserting a toothpick or knife. If it comes out clean, the muthiyas are ready. Let them cool a bit and then cut them into small pieces.
- Heat one teaspoon oil in a pan. Add mustard seeds, sesame seeds, asafoetida and curry leaves to it. When the mustard seeds start crackling, add chopped muthia and mix gently.
- Cook on low flame for two-three minutes, so that the flavor of the tempering gets absorbed properly into the muthiya. Garnish by adding green coriander on top.
- Your hot Gujarati Doodhi Na Muthiya is ready. They can be served with green chutney, mint chutney or curd. From morning breakfast to evening tea, this dish tastes delicious.
Follow these tips to make muthiya soft
- After grating the bottle gourd, do not drain the water completely.
- Do not knead the dough too hard.
- Keep the muthia rolls of medium size, so that they can cook deep inside.
- Keep enough water in the steamer and do not open the lid frequently in between.
- Limit the amount of oil in tempering.
